Zucchini Bread – 1998

2 c grated zucchini (peel & all)

3 eggs                                   2 c sugar

1 c vegetable oil               3 c flour

1 t baking soda                 1 t salt

3 t vanilla                            3 t cinnamon

3 t baking powder           chopped nuts, if desired

Beat eggs until light and fluffy; mix remaining ingredients all together. Grease and flour 2 loaf pans and pour ingredients evenly into both. Bake at 350° about 70 minutes. Yields 2 loaf pans.
