Meaty Zucchini CasseroleMichael O'Brien, Summit

Ingredients

  • 2 c grated zucchini or yellow squash
  • 5/8 c unbleached flour 
  • 1 t baking powder
  • ½ t salt
  • 2 T vegetable shortening
  • 1/3 c minced onion
  • 1 large egg white beaten
  • 1 large egg beaten
  • 2 t olive oil
  • 1/3 c grated cheese of choice; parmesan, cheddar, asiago, Romano, etc. separate or mixed
  • 1 t garden herbs of choice
  • Dash of pepper
  • ¼ c chopped pepper of choice, mild or hot
  • ½ c sweet corn
  • ¾ c chopped smoked sausage or ham

Directions

Preheat oven 350°, mix all ingredients together in a bowl; grease baking dish and pour mixture.
Bake until golden brown, until tester comes out clean, about 45 to 50 minutes. Cut into squares / slices and enjoy!
