Meaty Zucchini CasseroleMichael O'Brien, Summit
Ingredients
- 2 c grated zucchini or yellow squash
- 5/8 c unbleached flour
- 1 t baking powder
- ½ t salt
- 2 T vegetable shortening
- 1/3 c minced onion
- 1 large egg white beaten
- 1 large egg beaten
- 2 t olive oil
- 1/3 c grated cheese of choice; parmesan, cheddar, asiago, Romano, etc. separate or mixed
- 1 t garden herbs of choice
- Dash of pepper
- ¼ c chopped pepper of choice, mild or hot
- ½ c sweet corn
- ¾ c chopped smoked sausage or ham
Directions
Preheat oven 350°, mix all ingredients together in a bowl; grease baking dish and pour mixture.
Bake until golden brown, until tester comes out clean, about 45 to 50 minutes. Cut into squares / slices and enjoy!
