Cranberry Almond Bread Kathy Lesser, AITC Educator
2 c all-purpose flour
1 ½ t baking powder
½ t baking soda
dash of salt
1 c sugar
½ c orange juice
¼ c water
1 egg
2 T butter, melted
1 c finely chopped almonds
1 c fresh cranberries, chopped
1 c white chocolate chips (or 8 oz. white baking chocolate broken into very small pieces)
powdered sugar
Preheat oven to 350 degrees. Combine all the dry ingredients , then blend in the orange juice, water, egg and butter. Then combine the almonds, cranberries and chocolate chips. Pour batter into a 9x5 greased loaf pan. Bake at 350° for 1 hour or until a tester inserted comes out dry. Cool in pan for 15 minutes. Remove from pan and sprinkle powdered sugar on the top. 8 - 10 servings Enjoy!
