Recipe of the MonthItalian Style Marinated Tomatoes

20 lg tomatoes, sliced into wedges

1 c olive or vegetable oil                            

½ c red wine vinegar

¼ c fresh chopped basil

2 t dried oregano leaves

2 t  salt                

¼ t pepper

4 cloves garlic, minced



Place tomatoes in large bowl. In jar with tight fitting lid, place oil and remaining ingredients, cover and shake well.  Pour over tomatoes, toss gently to mix well.  Cover and refrigerate for at least 2 hours to blend flavors. Makes 20 c or 24 servings.
